White Bean & Artichoke Dip
Artichokes are a nutrient powerhouse! Don’t be afraid to cook with them, as they are quite versatile. This delicious vegetable can balance blood sugar and improve digestive and heart health.
Ingredients
- 1 cup artichoke hearts canned or jarred (in water)
- 1/3 cup white beans drained and rinsed if canned
- 3 Tbsp olive oil
- 2 Tbsp lemon juice
- 2 tsp lemon zest
- 1 Tbsp fresh parsley
- 1/2 tsp salt
- Pinch of cayenne pepper
Instructions
- Place all ingredients in a food processor (or blender), and blend until smooth and creamy.
- Make it thicker by adding more beans or thinner by adding more olive oil.
- Enjoy with crackers, bread, or fresh vegetables.
- Store in fridge for 1 week.
