Artichokes are a nutrient powerhouse! Don’t be afraid to cook with them, as they are quite versatile. This delicious vegetable can balance blood sugar and improve digestive and heart health.

Ingredients
  

  • 1 cup artichoke hearts canned or jarred (in water)
  • 1/3 cup white beans drained and rinsed if canned
  • 3 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 2 tsp lemon zest
  • 1 Tbsp fresh parsley
  • 1/2 tsp salt
  • Pinch of cayenne pepper

Instructions
 

  • Place all ingredients in a food processor (or blender), and blend until smooth and creamy.
  • Make it thicker by adding more beans or thinner by adding more olive oil.
  • Enjoy with crackers, bread, or fresh vegetables.
  • Store in fridge for 1 week.
